eWhat I have discovered might be of interest to ALL Palio lovers.
It is simply that French Cuisine is probably one of the closest mix to what exists within a rich Palio diet.
For example, historically Palio's being Hunters and Gathers would eat what they could kill or what they could find in the ground or whatever was around them.
A Women's job was gathering tubers, berries, vegetables and nuts for her famly. I even believe that meat was not as predominant as most of us think. One problem they had was once the men killed an animal, they didn't have refrigeration to keep it for long, so meat wasn't as availble as these other above food items.
But I do believe that French cuisine because of its mix of meat and tubers might play a closer role of what a Palio diet might consist. All that is necessary is for the chef to eliminate both bread and dairy. But maybe not exclude butter, butter and butter.

That is why I am refering this article to Palio Cafe'. To me the Paleo diet is very simple and has more to do with what not to eat than what. However, once human beings became FARMERS, MERCHANTS and TECHNOCRATS, is when our food and health became compromised so therefore, bread, dairy and even processed foods, must be excluded.
So getting back to the Paleo diet and the French, I have a belief that every culture has some sort or "raison d' etre" or reason to be and that in particular is what makes French cuisine, so remarkable and so pricey.
It is not what our how you eat as much as Why which both the Paleo and French cultures have seem to capture which is why so many French restaurants today are including a Palio menu and if they don't our expert below suggests that Paleo in French cuisine is often created by the best French chef's who desire quality in their offerings, create Palio dishes unconsciously .
One of the reasons why the French are supposedly referred to as great lovers is because love proceeds from a good cup of coffee, and from a long inimate meal, and now you know the rest of their story. But getting down to its essence it has to start with great conversation and authenticity to go anywheres. Even marriages begin and celebrate around food which is why food is so important to every culure.
Not that I want to entertain why I love the French other than being brought up somewhat learning the language, but learning from its culture too is what I believe the reason the Gauls even during Julius Caesars time made for great Palio chefs and tribesmen.
So getting back to Paleoism, I believe that food was a way of life. Some days the Paleos would starve and when they happened upon a kill, it became a moment of celebration and eating and drinking and telling stories around the camp fire. It was this element of what I refer to as authenticity, that the Paleo lifestyle had offered, something that many of us humans have lost today.
Most on the Palio diet of today have recieved the message but lost its essence and that is because most are stuck on the two lower levels of Maslow needs. While many of the Paleo's of the past due to their lifestyle, experienced a life on Maslow;s highest rung, which he referred to as Self Actualization.
We can't understand what the Paleo's had until we understand Positive Psychology. Its author being Abraham Maslow. In his research in his "Hierarchy of Needs" he happened onto 5 levels of living.
It started off at the bottom up called:
1. Phychological incuding food, water, clothing and shelter, (notice food is way down at the bottom); then:
2. Safety and Securityheath, employment, family and social stability (once again health reasons for one eating this way is on its second rung; next:
3. Love and Belonging of feeling warmth fro friends, family and human intimacy the result of great conversation while enjoying your Paleo or French dinner,
4, Self Esteem where one gains a sense of confidence and respect where social position and maybe wealth might enter.
And finally, one quality that very few people possess is what Maslow suggests within her life time is:
5. Self Actualization which is more of an internal experience of life purpose, self acceptance and experiencing what I would refer to as one becoming comfortable within her own skin.
And far fewer too who experience TRANSCENDANCE, which for human beings is also available to the few.
To Maslow he looked on his "Heirarchy of Needs" chart much differently than most of us today would examine a human beings success.
When I studied it in college it was more about moving up the ladder from lower to higher and the job of a psychologist was simply theough therapy to guide a person up the ladder to a rung from which they would experience their highest level happiness within the first 4 areas. Well that is what I gained from its instruction to me by therapists who were deep in their practice, but not deep enough in Maslow.
What is the problem with the modern human being over the Paleo man is like the juggler on the stage of life and within our complex lifestyles, we human's today, simply have too many balls up in the air.
It wasn't until much later on that I examined what human success meant to Maslow, that I learned my instructors were all DEAD wrong in their analysis and in their training of Maslow philosophy.
Maslow was a PURIST and was experiencing Self Actualization when he created his theories., What Maslow recognized was that after he experiened what is commonly termed as a PEAK EXPERIENCE or Self Actualization that was when he created his model.
To Maslow, once a person was living as he was a Self Actualized life was when he was living from a more authentic POSITIVE perspective.
But once a a person was not living in a Self Actualized state of authentically, on any of down the 5 lower positions, that person had entered into a NEGATIVE region of lifestyle living.
So what does this have to do with Paleo Cafe' and all the Paleo Diet ideas of today, to Maslow, most of these ideas would have some value but more from a lower perspecitve and would be missing some of the more higher values which Maslow might admit, that Palio women might in fact have enjoyed.
What Paleos might have enjoyed which we no longer experience today is a more AUTHENTIC, VULNERABILE and PERSONAL MEANING lifestyle.
I believe that the complexity of todays lifestyle in many ways has reduced much of our need for authenticity. Therefore the psychology profession of today must remain and help people live some semblance of a happy life, up from the first 4 Maslow levels, with few experiencing his 5th.
So why do I believe that Paleo's experienced closer to a Self Actualizationlevel than people do today? It was because Palio's had so much more PERSONAL and INTIMACY time to explore their own inner selves, is why to Paleo's to Maslow, many Palio tribesmen would have gained many of these rich enduring qualities, and qualities that many of us in our modern era no longer possess.
So unless we make a conscious effort to take time to go for walks in naturer preferably and spend quality time alone, and do what I have done, and that is to create a somewhat Paleo lifestyle experience of more than 30 minutes or more a day, then a person of today dealing with so many complex life issues will always live with her lower 4 regions.
